He's the man behind the mouthwatering desserts and pastries that line the Aqua buffet and Dusit Thani Guam Resort's Gourmet. Head pastry chef Mackie has worked around the world, from India to the Americas, and his love for baking has landed him here in Guam where he creates delectable delights for the Tumon Bay hotel.

"This is every child's dream, to play with chocolate and cream!" he boasted. And taught us how to make one of his specialties: a classic chocolate mousse.

"Four ingredients, very easy to make, so what we do is we take the cream and then we put it on a double boiler," he said. "And then while this is stirring and warming up, you add the sugar, and then the 8 oz. of egg yolks."

After ten to fifteen minutes of cooking it becomes a thickened cremon glaze. You temper this by mixing in two pounds each of heavy whipping cream and 63% coco dark chocolate. So we stir this thoroughly," he demonstrated. "And if you want a more intense chocolate flavor, you can add an ounce of instant coffee."

Next let it sit in the refrigerator for one to two days. "As it sits in the refrigerator it gets nice and firm and the chocolate gets mixed up with the egg yolks and the whipped cream and it just divvies up the flavor," he said. Once the mousse is ready, squeeze into a martini glass and top with handmade chocolate curls with edible print and blackberries.

He invited the community to try his creations, saying, "Come join us with all the amenities we have in this hotel, it's a great brand new hotel with wonderful views in the restaurant and then these are offerings that we have been preparing for Dusit gourmet, and then this chocolate mousse is on the menu in Aqua, so if you're going to come and try it you should come down to Aqua!"
