University of Guam’s next BBQ Bootcamp features a sausage processing workshop

The University of Guam’s popular BBQ Bootcamp series will return on Saturday, Aug. 2, with a meat processing workshop, “Sausage 101.”
The class will teach participants how to prepare and flavor pork for sausages, specifically chorizo and American bratwursts, and how to fill casings using a sausage filling machine.
Led by animal and meat scientist Dr. Jeng-Hung Liu with the UOG Land Grant Extension Service, the workshop will teach participants first about food safety and the technique of making sausage. They will then gain hands-on experience making chorizo and bratwursts and will get to take home one pound of each.
The workshop is part of a U.S. Department of Agriculture grant project at UOG with the broader goal of creating interest among students to pursue a career in the meat and poultry processing workforce in Guam.
The Sausage 101 workshop will take place from 10 a.m. to noon on Saturday, Aug. 2, on the University of Guam campus.
