
BAKED CORN CASSEROLE
2 tablespoons Earth Balance Soy Butter
1 medium Onion chopped
½ Green Pepper OR 1 small can Green Chilis
½ Red Pepper OR 1 jar Pimentos
Saute together and set aside.
Mix in separate bowl:
2 Eggs beaten or 1 Tablespoon Egg Replacer equivalent
1 can Creamed Corn
1 can Whole Kernael Corn w/liquid
12 oz Corn Bread Mix
Pour into 9 x 12 inch casserole dish. Spoon sauted mixture on top.
OPTIONAL Dot with:
Tofutti Sour Cream
Sprinkle with:
Daiya Shredded Cheddar OR Regular Cheddar
Bake at 350 degrees for 30 minutes or until done.
