Chicken tinaktak- healthier version (serves 3-4 people)
- Chicken (ground) (1/2 lb )
- Local lemon (2)
- Coconut milk (1/2 cup)
- Chopped onions (1/2 cup)
- Chopped Garlic (3 cloves)
- Chopped Eggplant (1)
- Diced Cherry Tomotoes (6-8)
- Green beans (3)
- Salt (to taste)
- Pepper (to taste)
Heat pan and add oil
Add garlic, onions, and ground chicken
Cook until chicken is brown
Add cherry tomatoes and green beans (make sure to cook completely through)
Next add the eggplant (make sure to cook completely through)
Squeeze lemon into pan, adding until desired tanginess
Allow everything to simmer for a few minutes
Finally, add the coconut milk and remove from heat
Stir. Best served over steamed white rice
